Nadia Ellis's Vegan Tuna Meatballs

Vegan tuna patties, surprisingly wonderful and comforting. Worth a try!

Ingredients:

For about 10 meatballs:

  • 2 large potatoes

  • 2 handfuls of

  • Vegan tuna bag in used oil

  • A handful of chopped parsley

  • A handful of chopped capers

  • 1 small shallot, chopped

  • A handful of chopped roasted pistachios (what to do, you need to chop today 😁)

  • 150 grams of breadcrumbs (with or without gluten, whatever you like)

  • Oil for frying

  • Lemon juice

  • A handful of coarse salt for the potato cooking water

How to prepare:

1. Cook the potatoes in water with coarse salt until tender (about 15 minutes).

2. Transfer the potatoes to a bowl, mash, and add the mozzarella, tuna, parsley, and chopped capers and shallots, and mix well.

3. In a separate bowl, mix the breadcrumbs with the chopped pistachios.

4. Heat sunflower oil in a wide frying pan. Roll the patties and coat them with the breadcrumbs and pistachios. Fry on both sides (about 3 minutes per side)

5. Transfer directly to a serving plate and sprinkle with a little fresh parsley and lemon juice.

6. Serve and try not to finish everything before the plate touches the table :)
